Wash the olives in plenty of water and rinse them well.
Then fill the olives into the canister so that 1-2 fingers remain empty.
Put two tablespoons of salt and two tablespoons of sugar (1 tablespoon salt and 1 tablespoon sugar for each 1 kg black olives) in each can, close the lid of the can and shake it.
Roll every three days for 1 month in a cool place out of the sun.
On average, olives will be ready in 6 months. -
